The only drawback of cooking roast potatoes is that they typically take at least 40 minutes to cook, but ideally they’re better cooked for over an hour to ensure maximum crispiness - plus you have to factor in around 10 minutes for parboiling before they even hit the oven.

Air fryers are becoming increasingly popular as they offer both a healthier and quicker method of cooking, making them ideal for roasting potatoes. Cooking roast potatoes in an air fryer takes around half the time and the results will be just as crispy if you get the prep right.
Little Sunny Kitchen says you can have deliciously golden and crispy roast potatoes in just 20 minutes and all you need are three ingredients - potatoes, virgin olive oil and some seasoning. To start you simply need to cut your potatoes into around one-inch pieces and then toss them with two tablespoons of extra virgin olive oil in a large bowl. If you’re using starchy potatoes then it’s advised you soak them in cold water for around 10 to 15 minutes before roasting to get rid of the extra starch, and then pat them dry otherwise they will steam rather than roast and won’t crisp up.
Once your potatoes are liberally coated in oil you can add your seasoning. Little Sunny Kitchen recommends using smoked paprika, garlic granules, salt and pepper, but you can season your own according to your preference. Then simply place them in the air fryer basket and roast at 195C for 20 minutes, giving them a turn halfway through to ensure they are crispy on both sides.

If you’re using starchy potatoes, then it helps to soak them in cold water for 10-15 minutes prior to roasting them to get rid of the extra starch. Make sure to pat dry the potatoes, as otherwise, they will steam rather than roast. “Use tongs or turner to flip the potatoes halfway through, shaking the basket might break some of the potatoes and won’t flip them all.
