Chips are the perfect comfort food to have with dinner, and it is easy to make them yourself from scratch rather than open up a frozen bag. Making your own homemade chips may sound tricky but it only takes five minutes to prepare them before cooking them in the oven as you do not need to fry them. In fact, Sarah Rossi, a cook and founder of Taming Twins , has shared that making chips yourself is "ridiculously simple” as long as you use the right type of potatoes.
Sarah said: “When it comes to the type of potatoes to use, Maris Piper or King Edwards are perfect for chips. Also, potatoes that have been hanging around in the cupboard for a while are apparently even better as they’ve dried out a little – who knew?” Potatoes that have a high starch content are perfect to make chips with as they have a low moisture content which means they will crisp up better in the oven. Waxy potato types like Charlotte or Jersey Royals are full of water, which means their skin will soften up and become rubbery if you roast them instead of boiling them.
Maris Piper are the best type of potato as it has the most starch and tends to be used by most chip shops in the UK, but King Edward's are also good to roast. When chips are made with the right type of potatoes they will be perfectly golden on the outside while still being fluffy on the inside without having to fry them in oil. You will need: 1kg of potatoes (Maris Piper or King Edward) Two tablespoons of olive oil Two tablespoons of garlic granules Method: Preheat the oven to 200C and line a tray with baking paper.
Then, turn your potatoes lengthways and carefully into one centimeter slices. Place the chips in a bowl and add the olive, garlic powder and salt and pepper. Toss the potato slices until they are evenly coated.
Add the chips to a baking tray and make sure they are not overlapping; otherwise, they will not be able to cook properly. You do not need to peel the potatoes or prepare them any other way. Some people soak their potatoes in cold water for 30 minutes before cooking as it can make chips a little crispier but it is not necessary.
The key to getting crispy chips is to simply use the right type of potatoes and give them enough time to cook in the oven. Cook in the oven for 45 minutes. Flip the chips over and cook for another 15 minutes until they are golden brown on each side.
