For the owner of a new Ballpark coffee shop, crystals are part of her ‘spiritual journey’

Utah Eats: Luna Coffee & Crystals, a new cafe in Salt Lake City's Ballpark neighborhood, is the product of the owner's "spiritual journey" as she left a corporate job to follow her dream.

Hello, Eaters! I’ve been featuring a lot of food businesses in the Ballpark neighborhood recently, but so many cool things are happening there that I haven’t been able to stay away. This week, I have another Ballpark business for you: Luna Coffee & Crystals , at 25A E. Kensington Ave.

Owner Veronica Bojorquez — who immigrated to the United States from Mexico when she was a kid — said she decided to open her own coffee and crystal shop after getting burned out working for a chain of car dealerships for almost 10 years, climbing the ladder from a call center rep to the finance director. She said she started working on herself and discovered the world of spirituality, then learned about crystals. “I just love [crystals],” Bojorquez said. “They helped me so much; they calm me down and help me with my spiritual journey.

” Bojorquez opened Luna Coffee & Crystals officially on Jan. 25, choosing to feature the Spanish word for “moon” in the name. From the beginning, community was her focus with her shop.

“I wanted to make a change,” Bojorquez said. “This is not just a business for me. This is the start of something way bigger.

” Luna Coffee & Crystals is a cozy but airy space, with fresh flowers on the tables, shelves of crystals to browse, and a bookcase with a variety of books to read. Right now, Bojorquez is featuring Luna’s spring menu, with four special drinks: the Blush Chai (a rose syrup chai), the Dubai Dupe (a Dubai chocolate latte), the Lucky Irish (an Irish cream latte) and the Pot of Gold (banana-cream matcha). At the moment, they’re working on planning their summer menu, she said.

Bojorquez said they wanted to go for an “elevated” experience that also showcases a bit of Mexican culture. Dishes like the esquite toast (with avocado and Mexican street corn salad) and summer harvest toast (with prosciutto, grape tomatoes, peaches and balsamic reduction) are some of the standouts. The national chain offers over 20,000 unique drink combinations, according to a news release. • A combination Dunkin’ and Baskin-Robbins restaurant — the first such location in Utah — is scheduled to open at 2557 S. River Road in St.

George on Saturday, with an opening ceremony from 9 to 11 a.m. The first 100 guests in line will receive a coupon book for four free medium hot or iced coffees a month for 14 months (valid only at this location).

Booze (and Drink!) News • Two Utah bars received liquor licenses on Thursday, but one bar in Salt Lake City’s Ballpark neighborhood, a rum and cider bar called Apparition, had its application tabled. The owner of Apparition says the Utah Department of Alcoholic Beverage Services’ (DABS) liquor commission is targeting his business . • An employee stole more than $100,000 from a Salt Lake County liquor store over a 31⁄2-year period, according to a report from the state auditor that the Utah liquor commission’s chair described as “scathing.

” The annual audit, which the Office of the Utah State Auditor started in February, was released during the liquor commission’s monthly meeting Thursday. I love beets, and the creamy beets salad ($12) from Luna Coffee & Crystals showcased them in such a beautiful way.

Made with ricotta cream, beets, oranges, arugula and pecans, all drizzled with a beet reduction, this was a flavorful and refreshing salad that was perfect for spring. And the way it was plated was so lovely. I paired it with a 12-ounce iced Dubai Dupe ($5), made with housemade pistachio butter and topped with crunchy katafi topping.

It wasn’t too sweet, which I liked; instead it was just sweet enough to contrast with the salad, and full of intriguing textures..
