Eating a delicious, healthy breakfast is important because it helps to replenish the body’s energy stores after overnight fasting, providing it with essential nutrients. According to Healthline, it can help prevent blood sugar dips and reduce the likelihood of overeating later in the day, helping you to maintain a healthy diet . There are an endless number of foods on the market that can be consumed for breakfast, including cereals and breakfast rolls, but many of these are ultra-processed and contain lots of ingredients , including sugar.
I eat the same breakfast every single day. It’s free from ultra-processed ingredients, super filling, and extremely tasty—here’s the recipe which is ready in five minutes. Every morning, I’ll eat plain, unsweetened Greek yoghurt along with a variety of fruit, a drizzle of honey, sometimes 100% peanut butter as a drizzle on the top and the main star of the show - scrambled oats.
Scrambled oats are a customisable breakfast option packed with fibre and protein and can be made either sweet or savoury, but I always go for sweet. Whether you’re looking to switch up your breakfasts, eat healthier foods or are short on time in the morning, these scrambled oats provide the perfect option. I’m not even tempted to consume sugary cereals or toast with a sugary topping now, as this breakfast has a sweet kick and a delicious texture which reminds me of cake.
Ingredients 40g oats One medium banana, mashed One medium egg Half a teaspoon of ground cinnamon, to taste Method: Place your mashed banana into a bowl and mix in the egg until combined. Then, add in the oats and stir to combine, seasoning with cinnamon, if using. Heat a tiny amount of extra virgin olive oil in a frying pan before adding it to the oat mixture.
Let the bottom of the oats crisp up slightly before moving them around in the pan, as you would with scrambled eggs, until you have a texture you’re happy with. I like mine slightly crispy, which takes around five minutes to fry in the pan. Whilst the oats are cooking, I prepare my breakfast bowl with some Greek yoghurt and a drizzle of honey and wash my fruits.
I often pick berries but will also add grapes, pineapple, or whatever I have in the fridge. Once the oats are scrambled, I simply add them into my bowl for a delicious, filling breakfast with sublime textures which remind me of cake..
