I found a coffee and chocolate cake recipe that is simple, easy and indulgent–and most importantly, it can be made in just 20 minutes in the air fryer. In fact, people who, like me, don’t have the time to bake despite having a strong fondness for dessert, will be grateful to have stumbled upon this recipe . However, you might have to get past traditional conventions, as this coffee cake doesn’t involve any frosting– or even an oven, for that matter.
When made as per the instructions, this recipe makes four to five individual cakes (depending on the size of the ramekins you use). It’s supposed to cook in just 10 minutes in the air fryer , but it actually took 20 minutes to cook mine, with two ramekins per batch cooked each time. Ingredients 50 grams of all purpose flour Half a teaspoon of baking powder Two eggs, medium size 30 grams of powdered sugar 60 grams of butter 220 grams of dark chocolate 25 millilitres of espresso coffee + two tablespoons for the batter Method Start by cutting the butter into small, manageable cubes.
Place the butter along with 150 grams of finely chopped chocolate into a heatproof bowl set over gently simmering water. Stir the mixture constantly until it melts completely and becomes silky and homogeneous. Next, sift the flour together with the baking powder into a separate mixing bowl.
In a different bowl, whisk together the eggs, two tablespoons of coffee, and icing sugar until the mixture becomes light and aerated. Once the chocolate and butter have melted smoothly, pour the fluffy egg mixture into the bowl and stir to combine. Gradually incorporate the sifted dry ingredients, adding them in small amounts to prevent clumping.
Continue mixing until a uniform batter forms. Grease your ramekins generously to prevent sticking, then pour the batter evenly into each one. Gently tap them on the countertop to release any large air pockets trapped within.
Arrange the filled ramekins in the basket of the air fryer. If they do not all fit at once, cook them in successive batches. Set the Airfryer to 160°C and bake for ten minutes.
While the cakes are baking, make the sauce. Prepare a shot of espresso, then place it in a double boiler along with the remaining chocolate and a little coffee. Stir over a low flame until the mixture is fully melted and thoroughly blended into a smooth sauce.
Once the cakes are done, carefully remove them from the Airfryer and allow them to cool slightly before serving. Plate them with a generous drizzle of the warm coffee-chocolate sauce.
