Mathis was joined in the kitchen by daughters Nyla and Nimah Rahman, cooking up two recipes for Mother’s Day: roasted red pepper, mushroom, and spinach frittata with herb-whipped cottage cheese topping, and French toast with sour cream, both made from the California-based Knudsen dairy that has been churning out curds for decades.Frittatas and French toast from left with Nyla and Nimah Rahman and Lizzy Mathis (Michele Stueven)“My mom used to eat cottage cheese on a savory note,” Mathis told LA Weekly as she mixed the curds directly into the beaten eggs for the frittata. “She’d made it as a snack, mixed with cucumber, tomatoes, fresh herbs, and her favorite lemon pepper seasoning.



I’m the third one, baby of the family, and I would always take nibbles of whatever she ate. My kids do the same thing. I just have these great memories of those special personal moments of connection with my mom, and it became my favorite go-to snack as an adult.

”Its many uses across sweet and savory, economical and caloric lines are a big reason for its surge in popularity, as well as being a quick fix for extra protein in the diet, especially when adding it to eggs, without eating more meat.“I was raised by a single mom with three kids in Detroit and watched her stretch meals, often using cottage cheese,” Mathis said. “You can mix it into so many different things for a good meal.
