Serves: four people Ingredients 25g butter Four leeks, washed and thinly sliced Four x 125g salmon fillets, skin removed For the yuzu dressing 2cm piece of fresh root ginger, peeled and grated Two garlic cloves, crushed One red chilli, seeds removed and finely chopped Two tbsp yuzu juice Four tbsp light olive oil Salt and black pepper To garnish Small bunch coriander, leaves only Pink radishes, thinly sliced using a vegetable peeler Preheat the oven 200C (180C fan/gas six).
Heat the butter in a frying pan over a medium–high heat. Add the leeks and fry for a few minutes. Lower the heat and cook for 15 minutes.
Tip the leeks into an ovenproof dish. Put the ginger, garlic, chilli, yuzu juice, oil and salt and pepper into a bowl and stir. Reserve two tablespoons of the dressing.
Sit the salmon fillets on top of the leeks, season with salt and pepper and spoon the dressing on top. Bake for 12 to 15 minutes. Toss the coriander and radishes into the reserved dressing.
Then, once cooked, spoon the leeks and salmon on a plate. Drizzle over the radish and coriander-infused dressing on the salmon and leek dish, and enjoy. To make delicious mash, boil cut potatoes in a pan of salted water for about 12 minutes.
Then once a knife can easily pierce through a potato, drain the water out of the pan, place the pan back on the hob, add in butter and milk, then mash the potatoes. Serve..
