Game changed for sure when making pasta." According to several food experts, pasta water is full of starch from the noodles. That starch acts as a binder, helping sauces cling to the pasta and thicken up without adding cream or flour.

The starch helps emulsify (blend) oil and water, so your sauces get that silky, cohesive texture instead of separating. When you boil pasta, you should salt the water generously. This isn't just for the pasta itself; it's setting up your whole dish for more flavour.

As pasta boils, it absorbs some of that salty water. So when you toss it with sauce, that seasoning carries over and enhances the flavor without needing extra salt. Also, when you use the pasta water in the sauce, you’re adding a well-seasoned liquid, so the salt doesn’t just sit on top, it gets infused into the sauce.
