Rathfinny Wine Estate is launching a new menu at its Tasting Room Restaurant. The revamped menu, created by Chef Chris Bailey, aims to pair perfectly with Rathfinny's vintage Sussex sparkling wines. The menu, moving from fine dining to a more laid-back experience, will focus on drop-in dining with dishes meant for sharing.

It will feature a range of snacks like Sussex smokie croquettes and deep-fried nduja lasagna, as well as small and large plates. Left: Fresh oysters, artisan nibbles, and Sussex sparkling wine set the tone for a refined tasting journey. Large plates, served from 12pm to 3.30pm, offer options like lamb shoulder with braised butter beans, grilled whole lemon sole with seaweed butter, and Chateaubriand with bordelaise sauce.

To end the meal, diners can choose from muscovado crème caramel, whipped cheesecake with strawberries, or a selection of artisan British cheeses. Right: Golden croquettes, crisp wine, and ocean-fresh oysters—simple pleasures elevated to perfection.
