There's a new dining experience on the horizon at San Diego's famed Hotel del Coronado with the forthcoming opening of Veranda, an al fresco dining concept set to enhance the hotel's waterfront allure. Slated to open its doors this April, the buzz about Veranda is already palpable, and the restaurant will inhabit the space once known as Sheerwater and offer guests an oceanfront dining experience dressed with a garden-inspired aesthetic. This addition is coming hot on the heels of the highly anticipated Nobu Del Coronado, which is primed for a May opening, as per Hotel del Coronado's official announcement.
Veranda's design is inspired by the hotel's historic wraparound veranda, a feature that dates back to the hotel's 1888 opening. Providing a nostalgic nod to this emblematic part of The Del's architecture, the new restaurant aims to capture that same charm and elegance guests have enjoyed for over a century. The menu, rooted firmly in Southern California's culinary tradition, is shaping to be a tribute to local ingredients, further enriching dining with ocean-side views and a relaxing breeze.
Locally sourced ingredients will be a highlight on the menu, according to San Diego Magazine.The gastronomic experience will be guided by Executive Chef Brian Archibald, a seasoned veteran in the culinary scene whose background includes stints with household names like Daniel Boulud and notable properties such as The Phoenician Resort in Arizona. In a statement obtained by San Diego Magazine, Archibald said, "I’ve dedicated my entire adult life to working with food in restaurants and resorts," and that he is "really excited and humbled to bring a focus on quality and simplicity to Hotel del Coronado.
" Themed event nights like fried chicken Wednesdays or seafood boils on Fridays are planned to balance casual and upscale dining, creating a welcoming community atmosphere for locals and hotel guests alike.Besides the historical allure and the culinary offerings, Veranda will feature an intimate seating arrangement, with most of its 159 outdoor seats.
