Air fryer baked eggs taste so much more delicious with 1 extra ingredient

This ultra-quick and easy lunch only requires five ingredients, with one in particular adding a delicious flavour and texture.

Trying to think of what to have for lunch every day can be a struggle. It's easy to slip into the pattern of having the same thing every day, or grabbing something convenient, yet unhealthy, when you're out at the shops. This is why it's good to have a really basic recipe you can fall back on whenever you need some inspiration, and bonus points if it's customisable with whatever you've got in the fridge.

For me, baked eggs done in the air fryer never fail to hit the spot. And after making them in many different ways over the years, I always find there's one ingredient that makes such a difference to the flavour and texture. I come back to this recipe time and time again.

It couldn't be easier - all you really need is two eggs and a splash of milk - but it's what you add to them that can really make a difference. There are countless combinations that work really well. Feta and spinach, hot honey halloumi and avocado and salsa are all excellent pairings for this simple dish.

But the one thing that makes it taste great every single time is parmesan. It adds such a gorgeous, deep flavour and crispy texture to the eggs, and it's the perfect way to finish them off. Here's my current go-to baked eggs recipe , all done in the air fryer.

Ingredients Two eggs Splash of milk Two tsp crispy chilli oil Sprinkle of grated parmesan or grana padano Three sundried tomatoes, sliced Buttered sourdough for dipping Method Grab an air fryer-safe dish and lightly grease it with butter or olive oil to prevent the eggs from sticking. Crack the eggs in, taking care not to break the yolk. You can also use two ramekins, putting one egg into each one if you like.

Pour a small splash of milk on top of each egg, then add the sliced sundried tomatoes, chilli oil, and season with salt and pepper. Sprinkle the parmesan on top of the eggs, and pop them in the air fryer at 180C for 10 minutes. While they're cooking, toast some slices of sourdough bread and make sure to add plenty of butter.

Take the eggs out of the air fryer when they're done - be careful as they'll be really hot - and serve with the sourdough bread for dipping. This is the perfect easy work-from-home lunch, with so many different ways to customise and enjoy it..
